Eno powder- 1/2 tbs

Method

1- Heat 1tbs oil in a pan. keep the heat to law or medium. Add musterd seeds and let them to splutter and add some curry leaves in it. Now we will add semolina and start to roast it till they become aromatic and change color in very light golden brown.

2- To roasted semolina, add curd ,salt and water as required to make a medium consistency batter. If your curd is thick add 1 cup of water otherwise add only 1/2 cup of water.

3- Now leave the batter for rest about 15 - 20 minutes.

4- Heat the 2 to 2.5 cup of water in pot and let it be boil. Other side now we will add 1/2 tbs eno powder in the batter and mix it well but don't mix it too much otherwise bubble will dis-pear and idli will not be so fluffy.

5- Grease the idli pan moulds and put the batter in the center of it. Now place the idli stand in the hot boiling water pot carefully and cover with a lid and steam idli for 10 to 12 minutes. You should add some water continuously otherwise your pot can burn.

6-  To check the idli a toothpick inserted in the rava idli should come out clean. Remove the stand carefully and reast them for 2-3 minutes. Then remove the idli with the help of a spoon and serve it hot with sambhar or coconut chuteny.
