Kanji Recipe/ Black Carrot kanji / kali Gajar ki Kanji








Today I'll  share with you a mouth watering recipe kanji. Kanji is very famous drink in North India which made from black carrots fermentation with water and mustered seeds. 
I'm talking about kanji because Holi is coming soon and it is the festival of lot's of traditional sweets and drinks. Kanji is not as so much famous as thandai and lassi so you can try it on the occasion. Kali gajar ki kanji is such beverage which is both nutritious and full of flavored and you can try it with gunjiyas. Kali gajar ki kanji can prepare easily with few kitchen ingredients like black salt, mustered seeds, chili powder and black carrots in main ingredient which is full of fiber and nutrients. Black carrots are full of vitamin k, potassium,  antioxidants and also have dietary fiber. Black carrots may improve heart health, encourage weight loss, and reduce inflammation and your risk of certain cancers. These brightly colored veggies not only pack powerful health benefits but can also add color and flavor to many of your favorite dishes.
First of all peel the carrots and wash them. Cut the carrots into two inch long and thick pieces or as you want. Now take the water in a large pot and let it boil. Once water start boiling turn off the flame. Add chopped carrot into the boiled water. After adding carrot add salt, chili powder and grind mustered seed. Transfer kanji into a glass or wooden jar. Don't use plastic jar for it because it has a strong color which can spoil plastic jar. Cover the jar with lid or muslin cloth and let sit in a sunny spot for 3 to 4 days. Once a tangy flavored taste in it, it means kanji has been fermented and ready to drink. Put the drink to make it chill for better taste. Now enjoy this with black carrot pieces. If you don't have black carrot you can use red carrot and beet root.
This drink is fermented under the sunlight for 4 to 5 days where it develops healthy prebiotic.

Ingredients 




Black carrot - 2 nos
Chili powder - 1/2 tbs
Mustered seeds - 1 tbs
Rock salt according to taste
Water - 2 liter


Method

1- First of all peel the carrots and wash them.

2-Cut the carrots into two inch long and thick pieces or as you want.




3- Now take the water in a large pot and let it boil. Once water start boiling turn off the flame.

4- Add chopped carrot into the boiled water.

5- After adding carrot add salt, chili powder and grind mustered seed.

6- Transfer kanji into a glass or wooden jar. Don't use plastic jar for it because it has a strong color which can spoil plastic jar.

7- Cover the jar with lid or muslin cloth and let sit in a sunny spot for 3 to 4 days.

8- Once a tangy flavored taste in it, it means kanji has been fermented and ready to drink.

9- Put the drink to make it chill for better taste.

10- Now enjoy this with black carrot pieces.

If you don't have black carrot you can use red carrot and beet root.
